Ginger Chicken Soup

Weather's getting quite chilly this season so we highly recommend something like chicken soup to keep away colds and flu.

This recipe uses ginger and other ingredients packed with immunity boosters (while also being packed with rich flavour)! 🍲

Ingredients: 🐔

  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, finely chopped
  • 3 tablespoons of Wholefood Essentials Organic Ginger Powder
  • 2 32-ounce containers of low-sodium chicken broth
  • 2 medium parsnips, peeled and chopped
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, thinly sliced
  • 1 medium turnip, peeled and chopped (1½ cups)
  • ½ teaspoon kosher salt
  • 2-2½-pounds of deboned chicken breasts
  • ½ cup frozen peas
  • 4 scallions, sliced

Method: 🧑‍🍳

Step 1. Boil the chicken breasts and add a pinch of salt for seasoning.

Step 2. Take the chicken off the heat. While it cools, put the oil in a separate pan and saute the garlic, ginger and onion slices for around two minutes.

Step 3. Next is to prepare the broth. Put on the heat and mix in the parsnips, carrots, turnip, celery and the ½ teaspoon of kosher salt. Bring to a boil first, and then turn down the heat to let it simmer for around 18 minutes.

Step 4. Get the chicken breasts and start shredding them into the broth as it simmers.

Step 5. Add the peas and scallions last. Keep the soup on the heat for another four minutes to make sure they're well-cooked as well.
