Putting flaxseeds in your pancakes sounds a bit odd, but turning it into powder for the batter is a neat trick for transforming this regular breakfast recipe into a healthy, morning treat!🥞

Here's how you can do it!

Ingredients: 🥞

  • 50 g (¼ cup) Wholefood Essentials Organic Whole Flaxseeds Brown
  • 150 g (1 ¼ cup) gluten-free flour blend
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 240 ml (1 cup) unsweetened almond milk
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons maple syrup

What else you'll need: 💚

  • 1 high-speed food processor
  • 1 non-stick frying pan

Method: 👨‍🍳

Step 1. Place the flaxseeds in a food processor and whizz at a high setting until you get a fine powder.

Step 2. Transfer the flaxseed powder into a large bowl, along with the gluten-free flour, baking powder and bicarbonate of soda.

Step 3. Mix very well. The flaxseed powder could still leave clumps so make sure they're gone!

Step 4. Add the almond milk, vinegar and maple syrup, then mix again.

Step 5. Leave the batter to sit for 5 minutes to allow the flaxseed to absorb the excess liquid first.

Step 6. Heat up a tiny bit of oil in the pan and spoon or ladle in a small amount of the pancake batter.

Step 7. Cook on a low heat for a few minutes until the bottom of the pancake comes off the surface easily.

Step 8. Use a spatula to flip it over and cook for another few minutes until golden brown and crispy on both sides – this makes around 7 pancakes.
